Oh la la and yum yum yum.  This is my little invention and I am oh so proud.  Have last-minute guests and want to impress? This is oh so easy, and oh so good.

Chocolate & Port Mascarpone Mousse


Makes 4 I’m on a diet servings, or 2 I deserve it ones.  If you’ve had a really bad week, I recommend licking the spoon, and maybe the bowl too.

70 grams (about 2/3rds of a cup) good quality bitter-sweet  (semi-sweet) chocolate (I used 70%)

1/3 cup half and half cream (you could use heavy cream as well)

1 cup mascarpone cheese

3 tbsp port

1tbsp + 1tsp sugar (add more to taste if you like)

pinch of salt

chocolate shavings for garnish


1. Combine chocolate and cream, and using either a microwave, or a double broiler, heat until chocolate begins to melt. Stir until the chocolate is fully melted and combined with the cream.  Put aside.  Once at room temperature, add port, sugar, and a pinch of salt.

2.  Using an electric mixer, whip mascarpone cheese for approximately 1 minute until lighter and fluffier.  Once chocolate mixture is at room temperature, add it into the bowl with the mascarpone, continue to beat for two minutes.  Taste and adjust if more sweetness is required.

3.  Using either a spoon, or a pastry piping bag, place directly into individual serving containers. Cover and refrigerate until ready to serve.

4. Garnish with chocolate curls/shavings just before serving. Enjoy with a small glass of port.
